Smoked Stuffed Meatloaf

Great little variation on a traditional dinner staple! 

Smoked Stuffed Meatloaf

Ingredients:
2 teaspoons vegetable oil
1 onion, chopped fine
2 garlic cloves, minced
2/3 cup bread crumbs 
1/ 3 cup whole milk
1 pound lean ground beef
1 pound ground pork sausage
2 large eggs plus 1 large yolk
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon dried thyme
1/3 cup finely chopped fresh parsley
¾
teaspoon salt 
½
teaspoon black pepper

  • Mix all together and shape in a pan or tin foil.
  • Place on smoker at 225°F 
  • After 2 hours turn up to 350°F until internal temp reaches 160°F.
  • Remove once you reach 160°F, then glaze the meatloaf with your favorite BBQ sauce and let it sit for another 15 min.
  • Slice in 1" thick pieces and serve!

Haven’t tried the recipe yet but just looking at the ingredients list and nothing about the cheese on the list
